Grape variety: Carmenere 100%
AOC / IGP: Vin de France
Alcohol: 12%
Residual sugar: 0 g/l
Technical details: The grapes are picked by hand, sorted by hand and fermented naturally in terracotta clay amphoras. The wine then matures in the amphoras for 12 months before bottling. It is bottled without fining or filtering.
The Carmenere vines from which this wine is made are about 15 years old. Production is very small and only 1200 bottles of this wine was produced.
Our winemaker Nea got the idea for amphora wines while considering how to make the purest and most authentic wine possible. Her idea was to make a wine that would best reflect the fruit and soil of that orchard.
Oak ageing is common in Bordeaux, and while Nea likes working with oak barrels, the barrels always give the wine some flavour, tannins and texture. Amphora, on the other hand, is a neutral container, but a porous material, just like an oak barrel. Thanks to the porosity, the wine breathes but retains a clean, authentic taste.
Recommendation: The wine is great to combine with food, especially tasty meat dishes such as lamb racks with chimichurri sauce. Check the recipe here!
The wine is vegan friendly as we have not used animal-based products in the production. The wine is sold in 75cl bottles.
